With Easter nearly here, you may be tempted by something sweet (we know we are!), so why not try these Chocolate and Kale Brownies?
The kale (or you can use cavolo nero too) adds moisture to the recipe, meaning these brownies are extra soft, squidy and delicious.
200g plain chocolate, broken into pieces
225g butter, diced
200g pack cavolo nero
225g light brown soft sugar
3 medium eggs
100g plain flour
1 tsp baking powder

This super satisfying midweek meal contains a mouth-watering mix of chicken (or turkey) mince, black beans, kale and leeks, all topped with avocado and soured cream. 🥑
🔥 1 tbsp oil
🔥 1 leek, sliced
🔥 1 clove garlic, chopped
🔥 2 tsp chilli powder
🔥 1 tsp ground cumin
🔥 500g minced chicken or turkey
🔥 2 tbsp tomato puree
🔥 400g can chopped tomatoes
🔥 400g can black beans, drained and rinsed
🔥 250g bag kale
🔥 1 ripe avocado, diced
🔥 Soured cream and cooked rice to serve
For a special springtime meal, perfect for the weekend, try the Salmon with Creamed Spinach Sauce on Wilted Kale. (Two greens for the price of one!)
