Salmon, Orzo & Cavolo Nero Traybake

Ingredients

300g orzo pasta

275g cherry tomatoes

1 leek, sliced (200g)

2 cloves garlic, finely chopped

25g pack basil, leaves shredded

200g pack sliced cavolo nero

2 low sodium stock cubes

1 tsp smoked paprika

4 skinless salmon fillets, halved (400g)

Instructions

  1. Preheat the oven to 200oC, gas mark 6.
  2. Place the orzo, tomatoes, leek, garlic and ¼ basil in a large baking tray.
  3. Place the cavolo nero in a large colander over the sink and pour over a kettleful of boiling water, drain well and stir into the tray. Dissolve the stock cubes in 700ml boiling water and stir into the tray to mix well. Bake for 15 minutes, stir well and season.
  4. Sprinkle the smoked paprika over the salmon pieces and nestle into the tray then bake for a further 15-20 minutes until the orzo is tender and salmon is just cooked.
  5. Stir in the remaining basil to serve.

Cooking Tips

Try spreading the salmon with a little harissa paste instead of the paprika.
