Kale Pakoras by Noonis Kitchen

Approximately 800ml sunflower oil to fry
140g kale
90g besan/gram flour
160ml cup water
1½ tsp ground coriander
1½ tsp ground cumin
½ tsp whole cumin
½ tsp turmeric
Green chilli (finely chopped)

Pepper to taste


Heat oil in pan, on a medium to high heat

Wash and drain kale and remove leaves from stems. Chop leaves into 5cm pieces

In a large bowl, combine gram flour, water, ground coriander, ground cumin, whole cumin, turmeric, green chilli, season to taste and mix well

Dip kale in batter, shaking off excess. Cook for 3-4 minutes until fully cooked through. If pakora browns quickly, reduce heat.
