Gnocchi & Kale Minestrone Casserole

Ingredients

1 tbsp oil

1 onion, chopped (200g)

1 red pepper, diced (180g)

400g can chopped tomatoes

400ml vegetable stock (1 stock cube)

400g can cannellini beans, drained and rinsed

½ tsp caster sugar

180g pack kale

500g pack gnocchi

Instructions

  1. Heat the oil in a large saucepan and fry the onion and pepper for 5-6 minutes. Add the chopped tomatoes, stock, beans and sugar and simmer for 2-3 minutes
  2. Meanwhile, place the Kale in a large colander over the sink and pour over a kettleful of boiling water, drain well and add to the saucepan with the gnocchi, cook for 2-3 minutes and season to taste.

Cooking Tips

Great served with crusty wholemeal bread. Try adding ½ tsp hot smoked paprika or harissa paste to add a hint of heat.
