150g Puy lentils

2 x 200g packs kale

1.5 litres vegetable stock

195g can sweetcorn, drained

4 sprigs thyme

400g can chopped tomatoes


1. Cook the lentils in boiling water for 15 minutes, drain and return to the pan, add the kale, stock and the remaining ingredients.

2. Simmer covered for 8 minutes then season to taste before serving

Try using canned lentils for a quicker soup.
