Kale & Mint Vodka Crush

75g caster sugar

100g kale

2 sprigs mint, leaves only, roughly chopped

4 tbsp vodka

Crushed ice

Club soda


1. Place the sugar and 200ml water in a small saucepan and cook for 3-4 minutes until syrupy.

2. Add the kale and cook for 1-2 minutes.

3. Place in a liquidizer and blitz until smooth, strain through a fine sieve, add the mint and allow to cool.

4. Stir the vodka into the kale syrup and pour into 2 tumblers half filled with crushed ice. Top up with soda and serve.
