Here at Discover Great Veg we’d take any excuse to tuck into a curry! Spinach is a key ingredient to many curries, especially in Indian inspired dishes. ‘Saag’ is the most common Indian dish that contains spinach. It’s so simple, because one of the best things about spinach is that you don’t even need to worry about chopping it! Just pop a large handful in a saucepan and simmer with cumin, coriander and a pinch of salt and pepper. Spinach cooks very quickly too, so you don’t need to worry about slaving over a hot stove with this dish – it’s ready in minutes!

Here are a few of our favourite saag dishes:

Saag Aloo – Spinach and Potatoes, from BBC Good Food

Nutritious spinach makes the base for this traditional, healthy Indian side dish with potato and spices. It makes a lovely change from the classic side dish that is Bombay Aloo, as the spinach adds texture and flavour.

Saag Paneer – Spinach and Fresh Cheese, from The Guardian

Paneer is a fresh white, unsalted cheese that’s widely available to buy in most supermarkets. Although it’s incredible easy to make your own at home too, with nothing more than milk and a little lemon juice. This dish combines spicy, flavoursome spinach with this deliciously creamy cheese to make a side dish that’s hard to beat.

Aloo Gobi Saag – Spinach with Potatoes and Roasted Cauliflower, from Red Online

The addition of roasted cauliflower to this dish really bulks it out, making it ideal for a vegetarian main instead of a side. You get a real depth of flavour by roasting the cauliflower instead of boiling it, making this dish earthy and delicious. Serve with a soft naan bread and a dollop of yogurt and mint raita to cool it down if things get a little too hot!
