With these amazing recipes, you can cook a show stopping brunch in the comfort of your own kitchen, better yet – you don’t even need to change out of your pyjamas! Welsh Leek & Eggs Benedict

For a tasty twist on a classic, try this Welsh Leek & Eggs Benedict. If you don’t have English muffins you can serve this on crumpets or a thick slice of buttered toast instead. We love spreading a little extra horseradish on the muffin before serving for an extra hit of flavour!

Poached eggs with melted leeks and chipotle-tahini dressing

This brunch dish from Thomasina Miers is perfect for those weekends when you’re feeling lazy but are craving something packed with goodness that’s not too heavy. The melty leeks and runny yolks are comforting and delicious, and pair perfectly with the warm and spicy flavours of the chipotle. Serve on some toasted crusty bread with a squeeze of lemon juice to really freshen it up!


Sourdough with Creamed Leeks & Poached Eggs

Creamed leeks and spinach make a wonderful addition to this simple poached egg on sourdough toast. For an extra treat, top the toast with some flaked smoked salmon before adding the creamy leek and spinach mix. Season with a pinch of salt and cracked black pepper, and make sure you’ve got enough crust left over to mop up the delicious runny yolk!

Baked Eggs Brunch

This dish of baked eggs with sundried tomatoes, leeks, spinach and cheese is the perfect way to start a weekend – the ideal dish for when you just want to pop something in the oven and put your feet up! Tuck into these tasty veggie tray bakes while they’re still hot, and if you prefer a firmer yolk, just leave them to sit in the baking dish for an extra 4-5 minutes before serving.

Leek, Roasted Garlic & Avocado Toast

When it comes to avocado on toast, the toppings really are endless! One of our personal favourites is this dreamy combo of roasted garlic and sautéed leeks. Served with a drizzle of olive oil and a few dollops of pesto, this is a truly terrific toast that’s sure to become a new favourite of yours too.
